This class traces the path of coffee seeds and the concepts of cultivar, terroir, harvesting, processing, storage, and roasting. You will build your palate by tasting Ceremony’s current menu and develop the skills you need to talk about our coffees to your guests and guide their decisions.

Fundamentals of Coffee Extraction

This class dives into the basic science of coffee extraction, how to taste and assess and how to adjust so you can serve up quality coffee whether you are serving coffee on a cafe brew bar, a batch system, or espresso. We’ll learn and apply concepts like coffee-to-water ratio, flavor balance, grind setting, contact time, and get your palate and coffee dialed in.

Espresso and Bar Backing

This class explores the essential techniques and basic equipment required for proper espresso. You will learn how to taste and dial in espresso using the coffee extraction principles learned in Fundamentals of Coffee. You will also learn the proper workflow and drink construction when bar-backing.

This class teaches the concepts and mechanics of proper milk steaming. Well-crafted milk paired with a great shot of espresso creates a delightfully harmonious experience. From whole to skim to non-dairy milks, we will detail the concepts and mechanics of proper steaming and pouring of latte art, followed by hands-on practice.
