a tasty Pink Bourbon single variety lot from Huila
Lovely citrus and fresh apple notes delight the palate
Aristides Guarnizo is a part of a large, multi-generational coffee-producing family in Colombia. He and several other family members produce beautiful specialty coffees in central Huila on their respective farms. Aristides lives with his wife, Cielo, and their two children on their farm, Finca La Reserva, in the rural township of El LÃbano. Sitting at an elevation of 1800 masl, La Reserva covers four hectares — three of which produce coffee.
While the lot we purchased is Pink Bourbon, they also grow the Colombia variety. This is a washed process coffee; it is de-pulped and dry fermented in sealed plastic barrels for up to 60 hours before being rinsed and dried on raised beds in a parabolic greenhouse dryer for up to 25 days.
The Pink Bourbon variety is one that the coffee industry is still learning about from a botanical perspective. Originally misidentified as being related the Bourbon variety, it instead traces its genetics from an Ethiopian Landrace cultivar. This lineage gives us some classic characteristics we commonly associate with Ethiopian coffees: citrus and floral qualities. This Colombian Pink Bourbon reminds us of tangerines, pink lady apples, and brown sugar. Enjoy is as pour over a 1:15 coffee to (filtered) water ratio or go wild and try it as a flash brewed iced coffee!
