Another selection from our Rare & Experimental series, this Bourbon Ají variety is produced by José Herman Salazar and his family at their farm in Huila, La Guaca. Huila is a region in Colombia well known for its specialty coffee production. At La Guaca, coffee production is a family effort. José handles operations and harvesting; his wife Marina takes on processing and drying; and their daughter Blanca oversees farm administration. 

The Bourbon Ají variety began serendipitously when some trees from José 's Caturra seeds exhibited "distinct and superior traits," compelling him to propagate them to find out more. Following this, Bourbon Ají's star continued to rise, having cupped well with our importing partner, Caravela. This was in 2015, leading José to focus on cultivating the Bourbon Ají variety, which now comprises his highest quality coffees.

Despite the name, this variety is not genetically related to the Bourbon variety. According to genetic research from a lab in France, this variety is not even close to a Bourbon Mutation. Much like Pink Bourbon, it is genetically an Ethiopian Landrace variety. All that to say: this coffee has Colombian terroir with Ethiopian lineage. Look for notes of wildflower honey, citrus, cola, baking spice, and a vibrant acidity with juicy mouthfeel. We're enjoying this coffee brewed at a 1:15.5 coffee to (filtered) water ratio.
