Finca La Concepcion is from one of our favorite regions of Colombia: Narino. The farm, 70 lush hectares sitting at a staggering 2000 meters above sea level, has been in Ana Lucia Dulce's family for generations. She operated the land as a commercial farm for many years before becoming a specialty grower. She worked with our importing partners through the transition and now, due to her passion, know-how, and dedication to improvement, she is in her fifth year of growing exceptional specialty lots. We have had the privilege of offering her coffee for four years.
This lot undergoes a double fermentation, once in cherry and then once again after de-pulping. Upon washing, the coffee is dried on raised beds for 15-20 days, depending on the weather, until the desired humidity levels are reached.
We are happy to support Ana Lucia on her journey by offering this sweet, complex, washed coffee yet again. We suggest paper-filtered, pour over methods to get the most articulate brews. Get dialed-in to juicy, floral apricot and sweet cane sugar with a 1:16.5 brew ratio, filtered water at 202-204℉, a medium grind, and a 3-3.5 minute brew cycle.
