A Pink Bourbon lot from Alexander Vargas Osorio

Rare and Experimental

At first glance, Finca La Piragua might look like a dragon fruit farm. The vast fields of dragon fruit are how Alexander Vargas Osorio has chosen to diversify his coffee farm. Hidden amongst the fields are 12 hectares of Pink and Red Bourbon, Gesha, and Caturra coffee trees.

From a family of coffee growers, Alexander first decided to start coffee production on his own in 2000. He acquired a piece of shrubland and has spent the past two decades transforming it into a productive specialty coffee farm with the help of his wife, Lidia. Since 2006, they have been focusing solely on producing specialty coffee. Alexander is responsible for the harvesting, while Lidia oversees the fermentation and drying. 

Alexander is dedicated to improving quality and enhancing productivity to provide greater economic stability to his family. He is currently working on refining processes and infrastructure. We are excited to support him in this endeavor and offer this exceptional Anaerobic Pink Bourbon lot. Dial into notes of strawberry, honeysuckle, and vanilla complimented by a lemon acidity. We recommend a by-the-cup brew method to get the most complexity from this coffee. Start with a 1:16.5 brew ratio, filtered water at 208-210℉, a medium grind, and a 3-3.5 minute brew cycle.
