Coffee cherries are pulped the same day they are picked then left to ferment in the open air for 24 to 26 hours. They are then washed and dried on parabolic covered patios or raised covered beds for 10 to 20 days depending on the conditions on the farm.

Los Monjes AA is a lovely coffee from the municipality of Oporapa in Huila, Colombia. This coffee represents the work of many producers in the region who have several generations of coffee growing knowledge behind them. These are smaller scale farms growing mostly traditional varieties of Caturra, Colombia, and Castillo. There is a strong sense of community among the farmers, centering on religious tradition and the presence of a monastery in the mountains nearby. The monks there (los monjes) have played an important role in the culture development of the region. Agriculture, particularly coffee growing, is central to this region's economy. The agroclimatic conditions paired with generations of coffee growing experience bring us this easy drinking and crowd pleasing coffee.
Dial in to notes of orange zest, caramelized sugar, dried cherry and toasted walnut by starting with a 1 to15 brew ratio, filtered water at 203-206°F, a medium grind, and a 3 to 3.5-minute brew cycle.
