Paola and her family run the Patio Bonito in Cauca, Colombia. The Trujillo family has been growing coffee in this region for nearly 50 years. They are innovative, passionate, and meticulous in their work, which translates to the high quality coffees they produce. Every aspect on their production: from seed to parchment is done with care and intention. Paola herself spent years working as a buyer and cupper for an exporting company before returning to the family farm in 2022, where she has led the innovations in their post-harvest processing.
The Trujillo family is led by three core values: food security, soil conservation and management, and coffee cultivation. Their philosophy is, “The best legacy we can leave to our children is: love, knowledge, and a planet in which to live." Producers like Paola and her family inspire us and motivate us to live out these principles in our own lives, and we are honored to try to capture some of that in a delicious cup of this beautiful coffee.
This is a single variety lot, Sidra, which is an Ethiopian variety. Look for lovely tropical notes that remind us of sweet lime, dark chocolate, toasted coconut, black tea, and cane sugar with a mouthfeel that reminded us of a strongly steeped black tea. For a juicy medium body brew, try a 1:15 coffee to (filtered) water ratio.
