In the 70s and early 80s, El Salvador was one of the top 10 coffee-producing countries in the world. When the Salvadoran Civil War started, conflict affected many coffee farms and production fell steeply. The industry has struggled to recover entirely but still holds great potential. We sourced this lot through our exporting partner who has worked with producers in this area since 2012. Recognizing the potential for great coffee, they opened a buying station and cupping lab in La Palma in 2015 to build better relationships with producers.
We first sourced coffee from the El Mural community in 2021. The community comprises two main cantons: Citala and La Palma. Both are part of the Montecristo Trifino, a tri-border national park shared between El Salvador, Honduras, and Guatemala. This cloud forest is protected for its incredible biodiversity. This season we sourced two coffees from the community, this naturally processed Gesha lot and a community honey lot we use in our Fall Annuals blend.
Comprised of Gesha grown on two farms, we're excited to get our hands on this special, limited lot. We are happy to support the producers we have worked with for several seasons as they diversify their crop and improve their quality. We recommend single, by-the-cup brew methods for this coffee. Get dialed in with a 1:16.5 brew ratio, filtered water at 204-26℉, a medium grind, and a 3-3.5 minute brew cycle.
