Ethiopia is well known as the coffee plant's ancestral home. It represents about 40% of the country's exports with nearly 15 million Ethiopians relying on coffee for their income. With such a large share of the export percentage, the Ethiopian government has long been involved in the industry, causing systems to shift and change regularly, and requiring our importing partners to be ever-nimble in getting these incredible coffees to us. The past couple years have proved especially tricky as crop yields and pricing have shifted quite a bit, raising prices for importers and, in turn, roasters and consumers. 

We're excited to bring Bona Zuria, a red honey processed coffee, to our menu! It has hallmark floral and citrusy characteristics of a classic washed process Ethiopian coffee, with a juicy and full mouthfeel reminiscent of a naturally processed coffee. Bona Zuria is both citrusy and light, like a Meyer lemon and pink lemonade and also full and rich like a strongly brewed black tea with notes of red currant, stone fruit, and demerara sugar.  

While this coffee sings as a filtered black coffee, it would also be a delight as an espresso or in a cortado. We're enjoying it brewed at a 1:16 coffee to (filtered, 204° F) water ratio on a flat bottom dripper.
