Roast Profile 1 - Light

a classic washed Ethiopian profile

Soft, delicate black tea notes with cane sugar sweetness and Meyer lemon acidity

Mustefa Abakeno, along with 36 small holder producers in the Limu region of western Ethiopia, grew this coffee at elevations between 1950 and 2100 MASL. The coffee cherries are collected and processed at the small washing station on Mustefa's farm. This washed process coffee is a classic Ethiopia flavor profile: clean and bright, with notes of stone fruit, citrus, black tea, and soft tropical fruits like guava and papaya.

This coffee tastes great whether roasted lightly or with more roast development on it. We've stuck with a lighter roast to highlight the unique and beloved terroir of washed Ethiopian coffees. Similarly, this versatile coffee will taste great as a filtered brew, espresso, or light-bodied flash-brewed iced coffee for those hot and steamy days of summer now upon us.

For a filtered brew, we recommend dialing in this coffee at a 1:16 coffee to (filtered) water ratio to unlock notes of Meyer lemon, subtle guava, black tea, yuzu, and stone fruit. Using an Origami dripper with a Kalita filter will give you a nice medium body to support these delicate notes.

Yellow

Bright, vibrant yellow coffees offer refreshing and effervescent flavors found in meyer lemon, pineapple, and mango.
