A Classic Coffee Flavor Profile: Elevated

Las Tejedoras is a group of women coffee producers in Chiapas, Mexico whose work and commitment to improving farming practices has made a significant impact on the standards and quality of the coffee produced in this region. In partnership with Caravela, one of our importers, they have elevated their coffees in terms of quality primarily by improving their processing techniques in both fermentation and drying. Their efforts give us more complexity and fruit notes in the cup and give the community there more economic stability. Outside of coffee, Las Tejedoras is also known as a community of textile artists, rooted in their Mayan culture and heritage. Alongside producing beautiful coffee, this community actively upholds their history and identity through textile arts.
This coffee is grown at 1600 MASL in Chiapas, the southern-most state in Mexico, bordering Guatemela. The varieties Typica and Bourbon comprise this coffee. They are washed and fermented for 24-40 hours then sun-dried on concrete patios and palm mats. The average farm size for this producer group is 1.5 to 3 hectares (roughly 4 to 7 acres).
While this coffee has been a delicious component of one of our past seasonal blends, we are excited to feature it this season as a single origin offering. This coffee gives us an elevated take on classic coffee flavors: dark chocolate, brown sugar, butterscotch, and a hint of candied orange. We are enjoying this coffee brewed at a 1:15.5 coffee to (filtered) water ratio.

Light Brown
Reliable, all-day brown coffees balance sweet and toasty with a hint of excitement, creating well-liked flavors of milk chocolate, caramels, and vanilla ice cream.
